Origin & growing environment
Gayo coffee originates in the Gayo Highlands of Aceh, northern Sumatra, Indonesia. Its designated production area covers Aceh Tengah, Bener Meriah, and Gayo Lues, at elevations of approximately 900–1,700 metres above sea level. High-altitude conditions and cultivation under shade trees encourage slower cherry maturation, contributing to the coffee’s distinctive character. Local growing practices, soil conditions, harvest maturity, and post-harvest processing influence the final cup, creating variations in aroma, flavour, and body across farms and individual lots.

Gayo coffee typically presents a fragrant, layered cup with sweet chocolate, caramel, brown sugar, and gentle herbal tones. Depending on the lot and processing method, fruit notes may range from dried fruit to citrus or berry.

- Fragrant and complex, with chocolate, caramel, brown sugar, gentle herbs, and occasional dried-fruit notes.
- Sweetness
- Deep and rounded sweetness, often reminiscent of caramel, brown sugar, and dark chocolate.
- Acidity & body
- Moderate, balanced acidity with a creamy, full-bodied mouthfeel and a smooth, well-structured cup.
- Finish
- Long and pleasant, with lingering chocolate, herbal, nutty, and lightly spicy impressions.

- Variety
- Arabica; commonly reported Gayo cultivars include Timtim, Ateng Jaluk, Borbor, P88, and S795. The exact cultivar mix is lot-dependent.
- Processing method
- Traditionally wet-hulled, also known as Giling Basah or Sumatra semi-washed. Washed lots may also be available depending on the producer and mill.
- Elevation & soil
- Gayo Highlands, Aceh, Indonesia, approximately 900–1,700 metres above sea level. Exact farm elevation and soil profile are to be confirmed in the lot documentation.
- Crop year / lot ID
- To be confirmed for the selected lot at the time of quotation.
- Grade / grading standard
- Export-grade Arabica, with the applicable Indonesian grading standard and lot grade to be confirmed from the supplier’s quality report.

- To be confirmed by pre-shipment quality analysis. The target moisture range should be agreed with the buyer and verified before shipment.

- To be confirmed from the physical quality report and the grading method agreed for the transaction.

- Available on request for the selected lot, subject to sample evaluation and confirmation by the buyer.

- Origin, supplier, processing, lot identification, export, and available traceability documents to be confirmed for each shipment.

- Subject to current harvest availability and supplier confirmation. Minimum order quantity to be quoted for the selected lot.

- Export packaging and bag size to be agreed according to the buyer’s requirements and shipping plan.

- To be confirmed after lot selection, sample approval, contract, and shipment planning. Loading port and estimated lead time will be stated in the quotation.
